Philosophy
Tonight we're having dinner at Chef Pourcheresse's.
In this small setting, in the depth of the Old part of town, you feel privileged as soon as you arrive.
We'll be maximum twelve to sit and taste the evening menu built around the vegetables harvested from the Chef's very own permaculture garden.
The theme: let yourself be surprised and rediscover the flavours of nature around four ingredients
A Committed Gardener Chef
Chef Nicolas Pourcherresse, the youngest starred chef in France in 2005, settled his kitchens in the beautiful city of Lille for several years.
After having worked in a few renowned gastronomic addresses, he opened the Vagabond, where he stages every evening the stars of his garden.
The Chef builds his daily menu around the harvests from his permaculture garden located a few miles from Lille.
It's a true demonstration of his commitment to sustainable agriculture & accessible beautiful and tasty cuisine.
A fervent defender of local and healthy cooking, the Chef is part of the Mange-Lille chefs' collective, promotes organic cuisine in school canteens and encourages short supply-chains.
What's in my plate?
Depending on the season, you will, therefore, discover the treasures harvested in the garden, accompanied by meat and fish from local producers.
The wines offered in harmony with the menu are biodynamic or natural wines.
In the evening, a 4-course approach is proposed, with a few plates to share to put you in appetite.

Our opinion
An intimate place where you can feel the chef's commitment to a natural and explosive cuisine to the very end of your taste buds.
We rediscovered forgotten flavours; we found ourselves loving vegetables that we refused as kids and watched the chef's show cooking right in front of us.
The smells are divine, the dishes are beautiful, and above all, it's delicious.
